Chef Duy Pham’s Mussel Recipe

Executive chef Duy Pham uses fresh, locally sourced produce whenever possible. In fact, he grows the basil in this recipe right in his own “backyard,” the Parker Garage Garden. A key to his ingredient selection is a rotating variety of local, seasonal produce.

Chef Duy Pham’s Mussel Recipe


  • 1 pound mussels
  • 2 teaspoons canola oil
  • 1 teaspoon chopped garlic
  • 1 tablespoon chopped shallots
  • 1 cup white wine
  • 1 tablespoon butter
  • 1/2 cup chopped Colorado tomatoes, sourced from Seeds to Savor Farm
  • 3 large chopped basil leaves, from the Parker Garage Garden


1. Heat pan to medium/high. Add oil, mussels, garlic and shallots. Saute for about 30 seconds.

2. Glaze with white wine, adding in tomatoes until mussels start to open.

3. Finish with fresh basil leaves and toast points.
