Fourth-Generation Bootheel 7 Ranch Makes a Name for its Beef with Accolades from New York’s James Beard House

Bootheel 7 Ranch is a fourth-generation ranching family with more than 100 years of experience raising beef. Half of our family lives at our ranch in Lusk, Wyoming, and the other half is here in Parker. Our cattle are born and raised at the ranch and don’t leave until the day they head to our butcher here in Colorado. This perfect set-up allows us to personally oversee every step of the process. We offer monthly delivery to 12 different pickup points along the Front Range and will be offering home delivery and shipping soon. Parker customers also have the option to pick up at our home office anytime. 

We’ve had the privilege of working with local farm-to-table chefs, including Chris Starkus, the executive chef from Urban Farmer. When he was invited to cook at the James Beard House this summer in NYC, Bootheel 7 Ranch was asked to be featured as the main entree—a 90-day, dry-aged NY Strip and Steak Tartare. It was an honor for us, and the meal was declared “a top-five dinner” by the James Beard committee. While it’s nice to see others recognizing the caliber of our beef, feeding local families is such a privilege and is the heart of our business. 

We also strongly believe in giving back. Last year, our beef donations raised more than $8,500 for local charities, including Von Miller’s Western Round-Up, which raises money for children who need vision care.
